Restaurant inspections

Restaurant inspections are performed in the county by Miami County Public Health, except in Piqua, which has its own health department. Aug. 10

Buffalo Jacks, 1376 High Street, Covington — Critical violation at time of inspection: observed prep cooler holding top section temperature-controlled foods for safety (TCS foods) at 50 degrees Fahrenheit and bottom TCS foods at 45-47 degrees. All TCS foods must hold 41 degrees or below when cold holding. Management is going to time mark TCS foods until issue is fixed. Focus on this critical issue. Ensure all parts of slicer is cleaned and sanitized of food residual. Observed oil residual on parts. Observed walk-in cooler floor with dark build-up. Deep clean floor until it is smooth and easily cleanable. Resurface floor properly. Felt food residual on handles of equipment. Clean when needed or when required. Observed water leak under garbage disposal. Fix issue. Dishwasher thermometer is not working properly. Fix issue to ensure dishware is being sanitized. Clean behind sink area of residual on walls. Fix wall next to walk-in cooler door. Resurface/secure FRP board properly.

Frickers, 1187 Experiment Farm Suite C, Troy — Critical violation at time of inspection: observed two boxes of new bacon on shelf of walk-in over a box of celery. Raw meat must be stored separately from RTE foods to prevent cross-contamination. CORRECTED. The sanitizer needed in prep cooler refrigerator to monitor temperatures is below 41 degrees Fahrenheit. CORRECTED. The lids of the floor barrel is melted in spots. Replaced. The handle of slicer is broken and cut in spots unable to clean effectively. One set of pop machines next to dish area has straight levers. The manager states they refill from the station. If refills are made, then curved levers are required to prevent lop contact. Please replace.

True North Shell, 1298 S. Dorset Road, Troy — Satisfactory at time of inspection.

Waffle House, 1290 Archer Drive, Troy — Critical violation at time of inspection: observed worker handle dirty dishes then start putting away clean dishes without washing hands in between. Clean hands to protect clean dishes. Observed three wiping cloths sitting on counter instead of keeping in sanitizer buckets. Use bucket of sanitizer to keep wiping cloths. Observed several broken floor tiles in front of dishwasher and ice machine. Manager states she has the tiles but no one from maintenance to fix yet.

Aug. 11

Applebee’s Neighborhood Grill, 1759 W. Main. St., Troy — Observed a box of plastic lids on floor in storage. Keep all single use articles stored above six inches to protect from contamination. CORRECTED. Observed food debris on can opener. Clean tortilla chip holder around edges. Observed splash on wall in keg cooler. Paint is peeling from walls also. Clean walls more often and repair walls. Observed gnats under the dishmachine. Clean area well. Clean drains. Consult pest control.

Buffalo Jack’s, 1376 High Street, Covington — Follow-up inspection for prep cooler not holding foods 41 degrees or below to limit growth of bacteria of TCS foods. Prep cooler is working properly. Monitor and ensure 41 degrees or below on TCS foods.

Frisch’s Restaurant, 16 Weller Drive, Tipp City — Dishwasher is making a loud noise. Fix before the unit breaks. Observed rusting pop tray drain above ice. Replace drain area to prevent rust from falling into ice. Observed many flies in back food prep area. Eradicate flies safely. Properly fix or find issue allowing flies in. Deep clean hard-to-reach areas in food prep, dishwasher, and cooking area of residual build-up. Observed build-up. Observed food residual on equipment. Deep clean when needed or when required (especially areas of cook line.) Replace any caulking with mildew residual at sink areas.

Kid’s Learning Place and Head Start, 1849 Towne Park Drive, Troy — Satisfactory at time of inspection.

Koester Pavilion, 3232 N. County Road 25A, Troy — The can openers in kitchen are worn and need replaced. Clean often.

Mrs. B’s Catering, 101 N. Main St., Pleasant Hill — Satisfactory at time of inspection.

Aug. 12

Coldwater Cafe, 19 E. Main St., Tipp City — Observed wiping cloths sitting on counters on the line even wiping bucket availble. Change water in bucket often when food particles accumulate.

Rudy’s Dairy Bar, 1125 S. Miami St., West Milton — Observed mouthpiece of plastic spoons stored up in container. Make sure handles are up to prevent contact with mouth piece. CORRECTED. Critical violation at time of inspection: the inside of ice machine has some growth. Clean and sanitize more often to prevent growth. No hot water is available at sinks. Manager states she has someone coming to repair.

Aug. 13

Clark’s Pizzeria, 420 S. Miami St., West Milton — Operation in good condition at time of inspection. Ceiling tiles are beign installed within next few weeks. A third employee is certified in food safety. Certificate #2021167.

Hinder’s, 902 W. Main St., Tipp City — Critical violation at time of inspection: observed three boxes of chicken out at 48 degrees. The cook was getting ready to cut up. Keep all meat under refrigeration until ready to use. Only bring out meat as needed to process. Observed torn gasket on two-door refrigerator. Manager states they have been ordered. Observed a dirty fan being used in kitchen. Clean often to protect food and utensils/equipment.

JJ’s Lunchbox, 7031 S. County Road 25A, Tipp City — Bare drywall is on newly constructed walls in kitchen area. Cover walls with materials that are smooth and easily cleanable within 30 days. The thermometer being used isn’t accurate and needs replaced. Eggs obtained from local farmer. All meat products must be from an approved source that is inspected.

La Fiesta, 836 W. Main St., Troy — Critical violation at time of inspection: observed raw meat stored next to crate of cilantro in back walk-in cooler. Produce must be stored separately from raw meat to prevent cross contamination. The rinse cycle on dishwasher is 255 degrees which isn’t accurate. The tomato cutter has a broken cutting plate and holders have been cut. Please replace blades and holder. Observed food debris on the sides and floor of meat prep cooler on the line. Food debris on shelves in walk-in cooler need to be cleaned more often to prevent accumulation. Critical violation at time of inspection: Observed working spray bottles in chemical room without any labels. Label all containers to eliminate any confusion.

Aug. 14

Subway, 695 S. Miami St., West Milton —Follow-up for pest control issue. Evidence of pest was seen under pop machine cabinet. Areas were properly cleaned. Food service will monitor and use proper pest control procedure.
