Nov. 18

311 Drafthouse, 311 N. Main St., Piqua — Observed taco meat thawing in water at room temperature. Only thaw foods safely 1) in refrigerator, 2) under running, draining water, 3) while cooking, 4) in microwave if fully cooked. Observed food above 41F: turkey, 58F; tomato, 47F. Keep all TCS foods below 41F to prevent bacterial growth. Containers were too full in prep unit. Do not overfill. Provide thermometer for pizza prep unit so its temperature can be monitored. The dishwasher was not dispensing 50 ppm chlorine during the sanitize cycle. Repair to properly sanitize. Repair called in. Use three compartment sink to wash, rinse, and sanitize. The following items need to be cleaned: microwave interior, shelf by fryer, can opener.

Nov. 21

KFC, 1251 E. Ash St., Piqua — Observed cracked/broken food containers. Food containers must be smooth durable, and intact, cracks and breaks provide areas for bacteria harborage. The following items need to be cleaned: ceiling, hood, walls, shelf by prep area, containers holding clean food containers.

Hickory Farms, 987 E. Ash St., Piqua — Satisfactory at time of inspection.

Nov. 22

Bob Evan’s Farms, 999 E. Ash St., Piqua — The grill line and interior of the microwave need to be cleaned.

Charles Caserta Restaurant, 331 S. Roosevelt Ave., Piqua — Bread bags being re-used. These items cannot be properly washed, rinsed and sanitized, so they cannot be re-used. The following items need to be cleaned: the hood and surrounding area, the slicer, and the fryer.

Nov. 28

La Quinta Inn, 950 E. Ash St., Piqua — Observed a non-commercial crockpot in kitchen. All equipment must be commercial, NSF or equivalent. Remove. The cabinets in the kitchen/serving are are damaged and need to be repaired or replaced. Repeat issue.

Comfort Inn, 987 E. Ash St., Piqua — Missing ceiling tile above food prep area. Replace to prevent possible contamination.

Nov. 29

Beppo Uno Pizzeria, 414 W. Water St., Piqua — Bread with garlic spread marked “keep refrigerated” at room temperature. Items marked “keep refrigerated” must be kept below 41F to prevent bacteria growth. Item moved to refrigerator.

Piqua Catholic, 503 W. North St., Piqua — Satisfactory at time of inspection.
